We heard about beautiful flower arrangements and boxes of melt in your mouth candy, but numerous “to die for” recipes (old and new) were discussed and rated. We offer two for your review, experimentation and enjoyment.

A LITTLE BIT DIFFERENT BREAKFAST CASSEROLE (prepare the night before)

1 box (6 ounces) stuffing mix (any flavor)
1 pound breakfast sausage
1 cup green pepper (chopped)
1 cup onion (chopped)
2 cups shredded cheddar cheese
6 eggs
1 can (11 ounces) cream of mushroom soup
1-1/2 cups milk
Salt and pepper to your taste preference
6 drops hot pepper sauce (optional)

Grease 9x13 clear baking dish. Spread dry stuffing evenly across bottom of dish. Cook sausage, then add in pepper and onions till they soften. Spread evenly over stuffing. Sprinkle cheddar cheese over sausage mixture. In a separate bowl, whisk the eggs, mix with the cream of mushroom soup and milk, then pour evenly over cheese. Cover and refrigerate till morning. Remove from fridge and let stand for 30 minutes before baking. Bake at 375 for 45-60 minutes.

KAREN SNYDER’S WORLD FAMOUS TACO DIP (loved by millions world wide)

1 can pinto beans (12 oz)
1 tsp each of bacon grease, salt and onion powder
1 cup (8 oz) sour cream
1 package of Old El Paso taco dip (seasoning)
1 cup (8 oz) cheddar cheese
Green onions, tomato, black olives and whatever else you wish as toppings

Empty can of beans with bacon grease, salt and onion powder into a pot and simmer till they “pop”. Smash beans and spread onto a serving plate or 8x8 pan. Mix sour cream and taco dip. Scoop and spread onto beans once they have cooled. Add cheese and toppings of your choice. Serve with tortilla chips.
